Tomato & Shallot Salad

Fresh tomatoes are at their very best between July & August but are readily available all year round.  This is a very simple salad which compliments many of the dishes on this website.  Leave the tomatoes at room temperature for optimum flavour!


You will need...

Large serving plate
6-7 large vine tomatoes, thinly sliced
1 banana shallot, peeled & thinly sliced 
Handful of fresh basil, finely chopped
1-2 tbsp good quality extra virgin olive oil
Freshly milled salt & pepper

To make...

Serves 4

  1. Wash the tomatoes thoroughly, pat dry then slice as thinly as you can
  2. Arrange them neatly on the plate, starting in the middle, then spiral them around until you cover the plate
  3. Scatter over the sliced shallots & basil
  4. Season lightly, then drizzle with the olive oil
  5. Serve immediately!
