Tahini Rice Bars



Super healthy snack alert! These tasty little treats are packed with nutritional flavoursome seeds, tahini, maple syrup and a squeeze of honey. All natural with no hidden nasties and super easy to make. A delicious snack, which is perfect for lunch boxes!!


You will need...

Equipment
Medium baking tray covered in non-stick baking parchment
Large mixing bowl

Small saucepan

Square baking dish 23cm

Ingredients

80ml maple syrup

3 heaped tbsp tahini

1-2 tbsp honey

1 tbsp vanilla extract

100g puffed brown rice

40g black sesame seeds

40g sesame seeds

60g pumpkin seeds

60g milled linseeds

60g dried chopped apricots

60g dried chopped cranberries


To make...

Makes 15 bars 

1.       Preheat the oven to 200/180(f)

2.     Heat the maple syrup, tahini, honey and vanilla extract in a small pan. Mix until fully combined and smooth, remove from the heat and set aside  

3.     Add the rest of the ingredients to a large mixing bowl, stir in the tahini mix until everything is fully coated

4.     Line your baking dish with non stick baking parchment and scrape it all in so it covers the entire tin

5.     Press down so its nice and even with a pallet knife

6.     Bake in the oven for 15 minutes or until the rice is golden

7.     Leave to cool for around 10 minutes before you cut into bars

8.     Store in an air-tight container for 5 days
