Sweet Potato Mash

Once you have tried sweet potato mash you will be surprised how nice is really tastes.  It's a good healthier alternative to regular mash and cooks a lot quicker.  Sweet potatoes are high in carotene, which is an excellent vitamin essential for good eye health


You will need...

Large saucepan with lid
Hand blender or potato masher

2 large sweet potatoes, peeled and chopped
1 tbsp butter
1 tbsp freshly snipped chives
Freshly milled sea salt & pepper


To make...

Serves 4-6

  1. Peel & chop the potatoes, rinse thoroughly
  2. Bring to the boil and simmer for 15-20 minutes
  3. Test with a fork to see if they are tender, if so, drain and add the butter, put the lid on and leave to melt for a minute or two
  4. Blend or mash until smooth
  5. Season well, add the snipped chives
  6. Serve immediately
