Sweet Potato & Courgette Waffles

You will need...

waffle maker

100g white spelt flour
1/2 tbsp baking powder
1/2 tsp salt
1/2 tsp freshly ground black pepper
1/2 tsp cumin
1 tbsp chopped chives
150ml milk of your choice
40g unsalted butter melted
1 large free-range egg
80g courgette grated (1 small)
100g cooked sweet potato (1 small)


To make...
Makes 4
  1. Preheat your oven to 140oC/275oF/Gas Mark 1
  2. Place the flour, baking powder, salt & Pepper in a bowl & mix well
  3. In a separate bowl, combine the milk, butter & egg.  Add this to the dry ingredients & stir well until blended & smooth
  4. Gently stir in the sweet potato, courgette & chopped chives & cumin
  5. Leave the batter to rest.  This step is very important as this allows the chemical reaction of the baking powder to begin which helps the batter to rise, which creates light & fluffy waffles!
  6. Preheat the waffle maker and lightly grease with coconut oil as it has a high smoking point and won't burn your waffles!
  7. When the waffle maker is hot enough pour a ladleful into each grid and cook as per your waffle maker (around 5-6 minutes)
  8. Once cooked, carefully remove & keep warm in the oven, repeat with the remaining batter.
  9. Delicious served on their own or with a poached egg, avocado and smoked salmon.
  10. The mixture will keep well in the fridge for 2 days in a container with a tight fitting lid or will freeze for 1 month
