Super Crunchy Two Cabbage Slaw

A coleslaw with a difference. The addition of the chopped gerkins gives this coleslaw a wonderful crunchy texture. Try and source mayonnaise made with cold pressed rapeseed oil as it contains a small amount of Omega 3 and is super tasty!

This coleslaw pairs beautifully with tuna, chicken, bbqs, burgers, roasted sweet potato and jacket potatoes or delicious on its own!


You will need...

Large bowl  

½  red cabbage, finely sliced
½ sweetheart cabbage, finely sliced
1 red onion, finely sliced
2 large carrots, grated with skin on
Handful parsley, finely chopped
4 gerkins, finely chopped
3 tbsp rapeseed oil mayonnaise
1 tbsp Dijon mustard
Handful of chives finely snipped
Handful of fresh leaf parsley, finely chopped
Freshly milled salt & black pepper
 


To make...

12-15 servings

1.     Finely slice both of the cabbages and place into a bowl

2.     Finely slice the onion and grate the carrot

3.   Mix together thoroughly

4.   Add the chopped gerkins

5.   Mix in the mayonnaise and mustard

6.   Add the chopped parsley and snip the chives

7.     Mix everything together and season well

8.   The coleslaw will last for 5 days in an air-tight container in the fridge
