Sugar Free Flapjacks



So simple to make and full of unrefined ingredients to keep you fuller for longer.  The combination of rolled oats with pumpkin & sesame seeds gives these little treats a wonderful texture.  

Pumpkin & sesame seeds are nutritional powerhouses which gives you natural energy & are super low in calories


You will need...

1 medium to large baking tin l lined with non stick baking parchment

2 ripe bananas, mashed
1 apple grated
75g unsalted butter
2 tbsp peanut butter (smooth or crunchy) free from palm oil
3 tbsp raw honey
250g rolled oats (jumbo not instant)
100g chopped dried apricots
100g chopped dried cranberries
60g pumpkin seeds
60g sunflower seeds
40g desiccated coconut
40g chopped hazelnuts

 


To make...
  1. Firstly preheat your oven to 160C/140C(Fan)Gas 3.  Line the baking tin with non-stick baking parchment
  2. Heat the butter, peanut butter and honey on a medium heat in a large pan until just melted
  3. Take off the heat and add the mashed banana, grated apple & 100ml hot water, mix thoroughly
  4. Pour in the oats, dried fruit and seeds and mix thoroughly until every dry ingredient is covered by the wet mixture (this is very important as this is what binds the mixture and gives it a bit of a crunch on the outside but soft on the inside
  5. Pour into your lined tin and pat down so its very tight and compact with a spatula
  6. Place in the oven and cook for 1 hour 
  7. Leave to cool in the tin & then cut into whatever size you like
  8. Once cooled they can be kept in an airtight container for 5 days
