Strawberry Chia Jam

Chia jams are really easy to make and are full of all the goodness that fruit & chia seeds bring.  By adding a small amount of honey or maple syrup you are reducing the sugar content to regular shop bought jam by over 80% making this jam so much healthier without compromising on the taste.  Try to use strawberries when they are in season for maximum nutrition and taste.  Place into a sterilised air-tight jar for 2 weeks in the fridge or up to 3 months in the freezer!


You will need...

Food processor or masher

1 punnet of strawberries (300g)
2 tablespoons of fresh lemon juice
2 tablespoons of raw honey or maple syrup
2-3 tablespoons of chia seeds


To make...
4 small jars or 2 regular size
  1.  Remove the stork from the strawberries and cut into quarters 
  2. Place the strawberries in a small pan and cook gently for 10 minutes or until the fruit has softened, don't over cook!
  3. Take off the heat and stir in the honey or maple syrup
  4. Place into your food processor and pulse gently until there are no lumps
  5. Place into a medium size bowl and stir in the chia seeds and lemon juice
  6. Leave for 5 minutes and stir again to ensure the chia seeds don't stick to each other
  7. Leave to set for about 10 minutes
  8. Spoon into your jars and once cooled place in the fridge or freezer
  9. Delicious served on toast, waffles or porridge
