Spicy Pork Bites

with tomato salsa & smoked paprika sweet potato wedges

These are tasty little bites made with very lean pork mince and rose harissa, which adds depth of flavour and a subtle kick!  Perfect served with fresh tomato salsa and smoked paprika sweet potato wedges.  Tomatoes are high in vitamin C plus potassium, folate and vitamin K.  They are rich  in carotenoids, which are said to help reduce the risk of heart disease by up to 50 percent.  A perfect reason to eat more fresh tomatoes!


You will need...

Large oven proof saute pan with a lid
Baking dish
Large bowl


1 kg extra lean pork mince
1/2 bunch spring onions, finely chopped
2 tbsp rose harissa
1 tbsp smoked paprika
1 garlic clove, peeled & finely grated
Handful of fresh parsley, finely chopped
1 tsp rapeseed oil for cooking

Salsa
1 punnet cherry tomatoes, quartered
3 spring onions, finely chopped
Handful of fresh parsley, finely chopped
Juice of 1 lime

Smoked paprika wedges
2 large sweet potatoes, peeled & cut into wedges
1 tbsp smoked paprika
Sprig of rosemary
1-2 tbsp rapeseed oil for baking



To make...

Serves 6-8

  1. Preheat the oven to 200/180(f) Gas 5
  2. Pour the oil into the baking tray and warm in the oven for a few minutes
  3. Mix the sweet potatoes with the oil, smoked paprika and season well, tip onto the baking tray and cook for 35-40 minutes
  4. Mix the pork with the spring onions, rose harissa, grated garlic, smoked paprika, season well
  5. Add the chopped parsley and mix until all the ingredients are fully combined
  6. Using your hands, scoop up a small amount of pork mince and squeeze into a walnut size ball, repeat with the rest of the mix
  7. Heat the oil in the pan then add the balls to brown them all over, you may need to brown them in batches depending on the size of your pan
  8. Once browned put the lid on and bake in the oven for 35 minutes or until cooked through
  9. While the pork bites and sweet potatoes are cooking, prepare the salsa
  10. Mix the tomatoes with the spring onions, parsley and squeeze over the lime juice, season well and leave at room temperature for the flavours to infuse
  11. Once the potatoes are cooked, sprinkle over the rosemary & season lightly again
  12. Remove the pork bites from the oven once they are cooked through and serve with the wedges, salsa and a green salad
  13. They keep well in the fridge for 2 days and can be eaten hot or cold
