Spicy Chicken Kebabs

This is more of a weekend dish, as you need time for the chicken to marinate to really get the full effect of the flavours.  Ideally prepare the chicken the night before and leave in the fridge for a full flavour infusion!! If you are short on time, marinate for a minimum of 2 hours.
Fresh ginger & turmeric are both full of antioxidants & aid digestive support.

You will need...
Large bowl
Pestle & mortar
Large saute pan


1 tbsp cumin seeds
1 tbsp coriander seeds
1 kg skinless & boneless chicken breasts cut into bite-sized chunks
4 tbsp Greek yoghurt
1 tbsp ground turmeric
4 garlic cloves crushed
Thumb size piece ginger, peeled & finely grated
2 tbsp paprika
1 tsp chilli powder
4 tbsp white spelt flour or plain flour
2 tsp raw apple cider vinegar or red wine vinegar
1 tbsp extra virgin coconut oil
1 red onion thinly sliced to serve
1/2 sweetheart cabbage, thinly sliced
1/4 red cabbage, thinly sliced
1 red pepper, finely sliced
2-3 little gem lettuce, finely sliced
Handful of fresh coriander, chopped
Handful of fresh parsley, chopped
1 lemon
1 lime
4-6 wholemeal flatbreads or pitta bread, toasted
Chilli sauce (optional)

To make...
Serves 4-6
  1. Firstly heat the cumin & coriander seeds in a small pan over a medium heat to toast them until you can smell them.  Tip into a pestle & mortar and grind until fine
  2. In a large bowl add the chicken, yoghurt, cumin & coriander, turmeric, garlic, ginger, paprika, chilli, flour & vinegar.  Season to taste and give it a good stir until the chicken is fully coated with yoghurt & spices.  Cover & chill for a minimum of 2 hours or ideally overnight in the fridge.
  3. Heat the coconut oil in a large pan on a medium heat, add the chicken and fry until cooked through, turn occasionally to prevent the chicken catching.
  4. Once cooked place into a large bowl squeeze over the lemon & lime, scatter with coriander or parsley  
  5. Place the onion, cabbage, lettuce & peppers in a serving dish with the flatbreads or pitta's
  6. Place the salad & chicken in the flatbread & squeeze over the chilli sauce if using
