Spiced Tabbouleh

Bulgur wheat is a wholegrain cracked wheat with a delicately nutty flavour.  Wholegrains are high in fibre, healthy plant-based proteins, vitamins, minerals, and a variety of phytochemicals that will improve your health!  In fact wholegrains can improve your health in many ways, they can help with digestion, reduce cholesterol, they can lower your blood pressure and control your weight.  This tabbouleh pairs beautifully with the spicy prawns & salmon kebabs


You will need...
Medium bowl
Small bowl

250g bulgur wheat
300ml boiling water
1 tbsp rose harissa
150g cherry tomatoes, quartered
1/2 large cucumber, finely diced
1 red onion, finely diced
Handful of fresh parsley, chopped
Handful of fresh basil, chopped
2 preserved lemons, seeds removed, finely diced
Juice of 1/2 lemon
1 tbsp chilli oil
1 tbsp extra virgin olive oil
3 garlic cloves, crushed


To make...

Serves 4-6

  1. Put the bulgur wheat into the bowl, cover with the boiling water, mix with a fork and leave for 15 minutes
  2. Fluff with a fork and mix in the harissa
  3. Add the quartered tomatoes, finely diced cucumber and onion, mix again
  4. Add the preserved lemons, parsley & basil, lightly season
  5. In the small bowl, whisk together the oils, lemon juice and crushed garlic
  6. Pour over the tabbouleh and mix thoroughly
  7. Can be kept in the fridge for 1-2 days in an air tight container once it has fully cooled
