Cinnamon & Spelt Waffles with Roasted Fruit Compote

 Delicious as a breakfast or a sweet treat, simply roast the fruit in the oven with a drizzle of honey. All berries cook really well, but peaches taste amazing when they are roasted!  Organic wholegrain spelt flour is high in protein & fibre & is a good source of slow release energy, which will keep you fuller for longer!  It has a unique gluten structure which, makes it easier to digest than modern wheat.

You will need...

A Waffle Maker

100g organic wholegrain spelt flour
1/2 tsp golden caster sugar
1/4 tsp sea salt
1 large free range egg
1/2 tsp baking powder
1/2 tsp cinnamon
1 tsp good quality vanilla extract
150ml semi-skimmed milk or milk of your choice
1 tsp coconut oil melted
40g butter melted
Fruit Compote
Handful of strawberries, raspberries & blackberries
2 peaches de-stoned
2 tablespoons of raw honey or maple syrup
Sprig of mint (optional)

To make...
Serves 2
Makes 3 large waffles (depending on your machine)
  1. Preheat the oven to 180oC/Gas 4
  2. Melt the butter and leave to cool
  3. Place the flour, sugar, cinnamon, baking powder & salt in a bowl and mix well
  4. In a separate bowl, mix the milk, cooled butter, egg & vanilla extract
  5. Add the wet mixture to the dry ingredients, mix well until fully blended and smooth, ensuring there are no lumps!
  6. Leave the batter to rest for 5-10 minutes as this allows the chemical reaction of the baking powder to begin, it will also help the batter rise which will give you fluffy on the inside and crunchy on the outside waffles!!
  7. Hull and slice in half the strawberries, slices the peaches in half and remove the stone
  8. Place all fruits in an ovenproof dish, drizzle with raw honey or maple syrup, cook for 15-20 minutes, once soft reduce the temperature to 140oC/Gas 1.  This will keep the fruit & waffles warm
  9. Pre-heat the waffle maker
  10. Melt the coconut oil
  11. When the waffle maker is ready lightly grease with the melted coconut oil, pour a ladleful of batter into each grid, cook for 5-6 minutes or as directed by your maker
  12. Once cooked carefully remove and keep warm with the fruit until you have used all of the remaining batter
  13. When the waffles are all cooked, slice the peaches & place evenly between the plates, spoon the berry mixture alongside the waffles, finish with some fresh mint
  14. The waffles & fruit can be eaten hot or cold 
  15. Double the quantities for extra waffles
