Smoked Tuna Goodness Bowl

with pumpkin seeds & crushed walnuts

Tinned smoked tuna is a tasty quick alternative if you don't have time to cook fresh tuna.  This goodness bowl is the perfect meal to make up the night before if you need to.  Tuna is high in lean protein & Omega 3 fatty acids.  This bowl is full of protein and lots of fibre which is essential for good digestive health


You will need...

Medium bowl

100g cooked quinoa
1 tin John West smoked tuna, drained
Handful of cherry tomatoes, halved
1/4 cucumber, diced
1/4 red pepper, diced
Handful of olives, chopped
2 tbsp smoked shredded beetroot or cooked beetroot
Handful of pea shoots or watercress
1 tbsp pumpkin seeds
Handful of walnuts, crushed
1 tbsp extra virgin olive oil to drizzle (optional)



To make...
Serves 1
  1. In your bowl, place the quinoa in first, then the beetroot and tomatoes
  2. Add the cucumber, peppers and olives 
  3. Scrape the tuna from the tin and mash with a fork, lightly season
  4. Add the pea shoots or watercress and sprinkle with pumpkin seeds and crushed walnuts
  5. Drizzle with a good quality extra virgin olive oil
  6. Enjoy!
