Smoked Salmon & Egg Bake

A truly low carb high protein breakfast, exceptionally easy to make, tastes delicious and will keep you going for hours. The salmon & eggs are both high in Omega 3, which is an essential fatty acid that is essential for our bodies to function properly


You will need...

Serves 2

 Medium baking dish fully lined with non-stick baking parchment
Small baking dish
6 large free-range eggs
100-150g smoked salmon
1 punnet of cherry tomatoes
2 large handfuls of watercress
1 tbsp freshly snipped chives
1 tsp dried or fresh oregano
1/2 lemon

 


To make...

  1. Preheat your oven to 200oC/180oC (Fan)/400oF/Gas Mark 6
  2. Line your baking dish with non stick baking parchment
  3. Beat the eggs in a medium size bowl or jug, season well
  4. Slice the salmon and squeeze over the lemon and season with fresh black pepper, stir into the eggs
  5. Snip the chives into the egg mixture, give it a stir then pour into your prepared dish
  6. Place the tomatoes whole into the other dish and season with oregano
  7. Bake both for exactly 20 mins
  8. The mixture will rise like a cake, cut with a spatula and serve with the tomatoes and a handful of watercress
