Sarah's Chicken & Chorizo Tray Bake

A very good friend of mine Sarah made us a delicious chicken and chorizo tray bake.  This is my version and I hope it does hers justice!  Chicken and chorizo complement each other beautifully.  Make sure you have a fresh wholemeal or sourdough loaf to serve so you can mop up all the lovely juices


You will need...

Equipment
2 medium baking trays
Large frying pan
Jug for the stock

Ingredients
8 boneless & skinless chicken thighs
130g diced chorizo
1 red pepper, finely sliced
1 courgette, cut into quarters
1 fennel bulb, finely sliced
2-3 banana shallots, finely sliced
Handful of cherry tomatoes, cut in half
1 lemon, cut in half
2 preserved lemons, quartered
1-2 tbsp chicken seasoning 
1 tbsp harissa paste
1 chicken stock cube
2 large handful of baby spinach
1 handful of fresh basil 
1-2 tbsp rapeseed or olive oil


To make...

Serves 4-6
  1. Pre-heat the oven to 200/180(fan)
  2. Gently heat 1 tbsp of oil in the frying pan, add the chicken thighs and lightly season with salt and pepper and chicken seasoning
  3. Pan fry for a few minutes on both sides the chicken a good colour.  Transfer to the baking trays
  4. Add the sliced peppers, fennel, courgette and shallots evenly between both trays
  5. Add the preserved lemons and half a lemon to each tray
  6. Scatter the diced chorizo and cherry tomatoes between the trays
  7. Drizzle a little oil over the vegetables and season with salt and pepper
  8. Mix the harissa with the stock cube and 1 litre of boiling water, mix until fully dissolved
  9. Gently pour in the stock mixture between the trays
  10. Bake in the oven for 40 minutes
  11. Remove from the oven and scatter over the spinach and basil, squeeze the lemon over the chicken
  12. Serve in the baking trays with some fresh wholemeal or sourdough bread
Note: If the juice has dried up a little, add a little boiling water to the stock jug and pour into the trays and mix with a spoon to remove all the flavour from the bottom of the tray
