Rose Harissa Chicken Kebabs

Rose harissa is simply a must have ingredient in my kitchen, it can be smothered over anything and gives whatever you have smothered in on a beautiful crimson colour and a truly delicious flavour with a subtle kick.  These kebabs are super easy and perfect for any occasion


You will need...

Wooden skewers (soaked in cold water for 20 mins)

Ingredients

 4 chicken breasts, cut into 3cm chunks
3 tbsp Greek yoghurt
2 tbsp rose harissa (see note)
1 tbsp oregano
Freshly milled seasoning
1 tbsp parsley, chopped
1 tbsp chopped coriander

To serve

1 red onion finely sliced
Large handful of watercress
Flat breads or pitta breads
Lemon wedges
Greek yoghurt


To make...

Serves 4-6

  1. Put the chicken into a large bowl; add the yoghurt, rose harissa, oregano & season well.  Mix to coat evenly 
  2. Place in the fridge for 30 minutes
  3. Preheat the oven to 200/180 (fan)
  4. Line a baking tray with non stick baking paper or foil
  5. Skewer 4-5 chicken chunks on each one until you have used all the chicken
  6. Cook for 20-25 mins
  7. When you are ready to serve, sprinkle the parsley, coriander, squeeze the lemon over the chicken, serve with the flat breads or pittas, finely sliced red onion, watercress a dollop of yoghurt
