Sauerkraut has been around for a long time and is now making a big comeback! It's extremely easy to prepare and has a wonderful unique taste. It will keep nice and fresh in the fridge for a good few months. You will need to buy a glass jar with a tight fitting lid for it to properly ferment. Fermenting vegetables is a really good way to look after your gut!
This sauerkraut is delicious served with cooked chicken in a salad or with cooked rice and roasted vegetables.
You will need...
Large glass jar with a tight fitting lid (1 litre)
Large mixing bowl
1 red cabbage, finely chopped
3 red onions, sliced into moons
3-4 tsp Maldon sea salt
1 tbsp fennel seeds
1 tbsp mustard seeds
1 tsp mild chilli powder
