Rasberrry Crumble Breakfast Jars

This is such a simple recipe but it creates such a wonderful depth of flavour.  It's quite a versatile recipe as you could also have this for dessert by simply swapping  yoghurt for ice cream.  The crumble has a slight crunch with a melt in your mouth kind of texture and the raspberry compote has a delicious aftertaste of orange...Simplicity at its best!


Ingredients

For the crumble
80g roasted chopped hazelnuts
80g toasted flaked almonds
80g ground almonds
60g golden caster sugar
30g unsalted butter (cold & diced into 2cm cubes)
2 tbsp tahini 

For the compote

200g raspberries (fresh or frozen)
40g golden unrefined caster sugar
Zest of 1 orange
1 tsp vanilla extract
1 tsp honey

To serve

12 raspberries
Sprig of mint
Greek yoghurt
Ice cream of your choice


To make...

Serves 4-6

  1. Pre-heat your oven to 180 (fan)
  2. For the crumble, simply add all the ingredients to a bowl except the butter, mix everything together then add the cubed butter and rub it with the other ingredients until it looks like breadcrumbs
  3. Place some non stick baking parchment to a large baking tray and add the crumble mix
  4. Spread evenly and bake for 15 minutes.  Remove from the oven to cool
  5. For the compote, simply add the ingredients to a pan and cook on a medium heat.  Give it a good stir ensuring the sugar coats the raspberries
  6. Leave to simmer for about 10 minutes.  Remove from the heat and leave to cool
  7. If using for breakfast, scoop a few tablespoons of compote into each bowl, add a few dollops of Greek yoghurt then top with the crumble and a few fresh raspberries
  8. If using for dessert do exactly the same as in step 7 but add a few dollops of your favourite ice cream a few fresh raspberries and a sprig of mint
Cooks Note:
The crumble will last for 7 seven days if stored in an air-tight container (once fully cooled)
The compote will last for 5 days in the fridge in an air-tight container (once fully cooled
