Berry Quinoa Porridge

A quick and tasty breakfast if you are short on time.  The porridge can be made up the night before and then gently reheated when your ready to eat it



You will need...

Small saucepan with lid 

60g quinoa, thoroughly rinsed
280ml milk of your choice
½ cinnamon stick
1 tsp vanilla bean extract or vanilla essence
1 tbsp maple syrup
Handful of blueberries, raspberries, blackberries 

Toppings (optional) 

Milled flaxseed (linseed)
Chopped nuts
Grate dark chocolate

 


To make…

Serves 1

 

1.     Place the quinoa in a pan over a low heat and add 200ml of the milk, cinnamon stick and vanilla extract

2.     Cover with a lid and cook for 8-10mins until most of the liquid has been absorbed, stirring occasionally

3.   Add the remaining 80ml of milk and maple syrup stir gently until the quinoa has thickened to your liking

4.   Remove from the heat, take out the cinnamon stick and stir in your berries 

5.   Sprinkle with milled flaxseed or chopped nuts or grated dark chocolate 

6.   If you need to serve more than one person, simply double the ingredients
