Quick Pickled Cucumber

Pickling vegetables is very easy as they end up with such an amazing crunch and depth of flavour.  Cucumbers have a very high water content, so it's vital that you try to remove as much as possible before you pickle them.  Pickled cucumbers are delicious served with tuna, salmon and chicken, in a salad and even topped on a homemade burger.  Cucumbers contain several vitamins and minerals and are rich in antioxidants


You will need...

Colander, bowl, small jar with a lid
1 large cucumber, cut into ribbons with a spiraliser or peeler

1 tsp Maldon sea salt
1 tbsp white wine vinegar
1 tbsp unrefined golden caster sugar
1 tbsp coriander seeds


To make...

1 jar

  1. Toss the cucumber with the sea salt and tip into the colander, leave for 20 minutes sitting on a clean tea towel
  2. Take handfuls of the cucumber ribbons and squeeze out as much water as you can, lay on some kitchen paper, repeat the process until all the cucumber has been squeezed
  3. Mix together the vinegar and sugar the bowl and add the cucumber and coat it thoroughly in the mixture
  4. Add the coriander seeds and mix again
  5. Leave to sit for 10 minutes, then its ready to serve
  6. It will keep in an air tight jar in the fridge for 1 week
