Pistachio & Hazelnut Chocolate Cookies

Pistachio & hazelnut really works with chocolate.  These cookies are very easy to make.  They are made with organic cacao powder, which is made from unroasted antioxidant-rich cacao beans.  Cacao powder is a great way of getting a natural source of minerals such as Potassium, Magnesium and Calcium.

You will need...

Food processor
Non stick baking parchment 
2 large baking trays

200g wholegrain spelt flour
100g coconut oil
100g unrefined golden caster sugar
40g cacao or cocoa powder
100g dark chocolate chips
1 egg
1 tsp vanilla extract
1 tsp cinnamon
30g pistachios, shelled and finely chopped
30g roasted hazelnuts, finely chopped

To make...

Makes 30 cookies

  1. Place the baking parchment onto two large baking trays
  2. Pre heat the oven to 180/160 Fan
  3. Place all the ingredients except for the nuts into your food processor, blend for 2 minutes or until fully combined
  4. Remove and press into 3 balls, cut each ball into 8 and roll each one into a little ball
  5. Squash into a disc with the palm of your hands and place onto the baking parchment
  6. Repeat until you have approximately 30 discs
  7. Chop the nuts and add the baking parchment, dip each disc into the nuts on both sides until fully coated, slightly squash again and place back on the tray about 2-3cm apart
  8. Bake in the oven for 20 minutes, remove and leave to harden up and cool
  9. They keep fresh in an air-tight container for 1 week
  10. Delicious with coffee or turmeric tea
