Pistachio & Cranberry Granola Bars

These granola bars are made with unrefined coconut sugar, pumpkin seeds & black sesame seeds & flax seeds which are full of valuable nutrients and a lot less sugar than shop bought granola bars!  A perfect snack for any time of the day and so easy to make.... Note: these bars are highly addictive!!


You will need...


Medium baking dish
Large saucepan
Non stick greaseproof paper

200g jumbo porridge oats (not instant)

60g pumpkin seeds
60g pistachios, finely chopped
60g black sesame seeds
100g dried cranberries
100g dried apricots, chopped
60g linseed
100g coconut sugar
3 tbsp raw honey
1 tsp cinnamon
80g unsalted butter


To make...

Makes 20 bars (approx)

  1. Preheat the oven to 160 140(f) Gas 3
  2. Line the baking tin with non stick greaseproof paper
  3. Mix the oats, nuts and seeds together and spread onto the prepared baking dish, bake for 15 minutes, stirring half way
  4. Melt the butter on a low heat and mix in the sugar until fully dissolved & caramel like, stir in the honey and remove from the heat
  5. Remove the oats from the oven and tip into the pan with the sugar
  6. Mix until fully combined and coated in the butter/sugar mix, stir in the cinnamon, cranberries and apricots
  7. Scrape into the baking dish and flatten until very compact and even, around 1.5cm thick
  8. Bake for 35 minutes
  9. Leave to cool in the tin for 20 minutes
  10. Cut into bars and keep in an air-tight container
