Pan Cooked Smoked Salmon & Eggs

If you are looking for a speedy breakfast that tastes great and is full of omega 3 & 6, then this is the breakfast for you!
High in protein and low in carbohydrates


You will need...

Medium frying or sauté pan

6 large free range eggs
200g smoked salmon
1 tsp butter
1 tbsp milk of your choice
1 unwaxed lemon
Handful of fresh parsley
Handful of freshly snipped chives
Freshly milled seasoning 


To make...

Serves 2

  1. Cut the salmon into small slices and season generously with black pepper and squeeze over half the lemon
  2. Finely chopped the parsley 
  3. Melt the butter on a medium to low heat
  4. Crack in the eggs one by one and stir gently with a wooden spoon, lightly season with salt & pepper
  5. Add the milk and continue to stir
  6. Add the salmon and continue to cook for 2 minutes
  7. Once the eggs are cooked turn the heat off and stir in the chopped parsley
  8. Snip the chives in the pan and zest the lemon over the eggs & squeeze the remainder of the lemon 
  9. Serve immediately!
