Medjool Dates with Nut Butter & Crushed Pistachios

Medjool dates are easily found in most super markets all year round.  They pair beautifully with nut butters and are the perfect snack without the nasty hidden sugar dips as they are high in natural sugars and contain vitamins and minerals.  They are high in calories so try not to eat more than 3 a day.  This is not really a recipe, more a suggestion for a delicious quick snack, ideal after a workout!


You will need...
6 medjool dates (pitted)
2 tbsp nut butter of your choice (no palm oil)
Handful of pistachios shelled and unsalted, crushed
Handful of dried rose petals

To make...

  1. Remove the stones from the dates and open it up
  2. Scoop in a tea spoon of nut butter into each date
  3. Sprinkle with crushed pistachios and rose petals
  4. Serve immediately
  5. They can be stored in an air-tight container for 1 week
