Mediterranen Spicy Chicken

A simple but tasty meal for anytime of the year but ideal for a family bbq.  Try to leave the chicken marinating for a least 30 minutes for a real depth of flavour.  Delicious served with my Mediterranean Lentil Salad /mediterranean-lentil-salad


You will need...

Ingredients

 4 chicken breasts, cut into 3cm chunks
1-2 tbsp rapeseed oil
1 tbsp dried oregano
1 tbsp mediterranean herbs
1 tbsp chilli flakes
Freshly milled seasoning
1 tbsp parsley, chopped
Juice from 1 lemon

To serve

Large handful of baby spinach
1/2 red onion finely sliced


To make...

Serves 4

  1. In a large bowl add the chicken chunks then drizzle with the oil, mix the herbs and chilli flakes to coat and season well
  2. Place in the fridge for 30 minutes
  3. Preheat the grill to high, cover the tray with foil
  4. Add the chicken to the covered tray and cook under the grill for 8 minutes, then turn over and cook for a further 6-8 minutes (put the timer on)
  5. Check to see if the chicken is completely cooked through before serving
  6. When you are ready to serve, sprinkle the parsley and squeeze the lemon over the chicken, serve with baby spinach and finely sliced red onion
  7. Delicious served with my Mediterranean Lentil Salad /mediterranean-lentil-salad
