Lemon & Almond Cupcakes

Cupcakes are easy to make and easy to eat! Perfect for a sweet treat and made with fresh unwaxed lemons.  Lemons contain high levels of vitamin C and a rich source of a group of phytochemical named bioflavonoids, which have been shown to help prevent heart disease.  The juice of 1 lemon also provides a good source of copper, vitamin B6 & potassium


You will need...


12 hold muffin tin
Food or hand mixer
12 cupcake/muffin cases
Small saucepan


100g unsalted butter
100g golden unrefined caster sugar
100g self raising flour
40g ground almonds
1 egg, lightly beaten
1 un-waxed lemon, finely grated and juice extracted


Topping
75g golden unrefined caster sugar
1 un-waxed lemon, finely grated and juice extracted
60g toasted flaked almonds



To make...

Makes 12 

  1. Preheat the oven to 180/160(f) Gas 4
  2. In a large mixing bowl or bowl of your mixer, beat the sugar & butter until pale and fluffy, around 7-10 minutes
  3. Gradually add in the beaten egg, then the flour, ground almonds, lemon zest and juice
  4. Mix until fully combined, spoon into the paper cases
  5. Place on the middle shelf of your hot oven and bake for 25 minutes or until golden brown and a skewer inserted comes out clean
  6. While the cakes are cooking, place the lemon juice, zest and sugar into a small saucepan, slowly bring to the boil, then slightly reduce the heat and let it bubble away for 10 minutes, keep stirring 
  7. Remove from the heat to let it rest, it should be like a syrup
  8. Once cooked leave to cool for 5 minutes then prick them all over with a skewer
  9. Gently spoon over the syrup with a teaspoon, ensuring the top of each cake is covered 
  10. Finally, sprinkle over the toasted flaked almonds and leave to cool completely
  11. These cupcakes will last for 4-5 days in an air tight container
