Harissa Spiced Chicken with Chimiechurri Salad


Harissa paste is a middle eastern spice made with red chilli peppers, paprika, oils & spices, it pairs beautifully with chicken which gives this dish a real kick.  Chimiechurri is a flavoursome uncooked sauce or dressing that is usually made with parsley, coriander, garlic, oil & vinegar and served with cooked meats & poultry.   



You will need...
Baking dish
2 chicken breasts without skin
2 handfuls of rocket
1/2 red onion finely diced
1 small bunch of coriander
1 small bunch of parsley
1/2 garlic clove peeled & crushed
1 tsp red wine vinegar
1 tbsp extra virgin olive oil
1 tbsp harissa paste


To make...
Serves 2
  1. Preheat the oven to 200C Gas 6
  2. Place the chicken in the baking dish, season to taste and cover with the harissa paste, ensuring the chicken is covered both sides
  3. Cook in the pre-heated oven for 25 minutes or until cooked through
  4. Whisk the extra virgin olive oil & red wine vinegar in a small bowl, add the diced onion & crushed garlic, season to taste
  5. Once the chicken is cooked, leave to rest for few minutes and toss the parsley, coriander & rocket with the dressing
  6. Spread the salad between 2 plates and serve with the chicken and its resting juices and any remaining dressing
