Harissa Chicken with Black Rice

with preserved lemon & tomato sauce

Harissa & chicken pair beautifully together, served with black rice and spinach this dish is high in protein and fibre.  Black rice does require a longer cooking time but its worth cooking up a little extra as it can be heated up or it is delicious served at room temperature.  Black rice is high in antioxidants and minerals and has a unique nutty flavour

You will need...

Saucepan with lid
Medium baking dish


2 chicken breasts
1 tbsp Rose Harissa (see cooks note)
2 preserved lemons
2 handful's of cherry tomatoes
1 garlic clove, peeled and grated
200g Nerone black rice, rinsed thoroughly
400ml boiling water
2 handful's baby spinach
2 tbsp pomegranate seeds
1 tbsp olive oil
Seasoning to taste

To make...
Serves 2-4
  1. Preheat your oven to 200/180(fan)
  2. Rinse the rice thoroughly, add 400ml of boiling water, bring to the boil and reduce to medium heat and cook for 30 minutes or until all the water has been absorbed
  3. Half the tomatoes and place in the baking dish, quarter the preserved lemons and then slice into thins, removing any pips, add to the dish
  4. Grate the garlic all over and add 1 tbsp of olive oil, mix together
  5. Season the chicken then smother both sides with the rose harissa paste ensuring it is fully covered
  6. Place the chicken on top of the tomato & lemon mix
  7. Cook for 30 minutes or until completely cooked through, remove from the oven and leave to rest for 5 minutes
  8. Once the rice has absorbed all the cooking water, remove from the heat and spoon onto two plates
  9. Add the spinach then place a chicken breast on each plate
  10. Pour over the tomato & lemons and remaining juice
  11. Scatter with pomegranate seeds
  12. Serve immediately
  13. It's also delicious cold, so perfect to make the night before for a take away lunch!
