Fig & Feta Salad

with orange, walnuts & redcurrant 

Fig and feta pair beautifully together as the saltiness of the feta seems to compliment the delicate sweetness of the fig.  The addition of orange, walnuts & redcurrant really give this little salad the wow factor!  Figs are now grown in the south of the UK and are generally available in the summer months (if the weather has been kind to us!)  Figs are one of the richest plant sources of a variety of vitamins and minerals, they are extremely tasty and nutritious!


You will need...

Small jug & whisk

80g feta
4 figs
1 orange, peeled & cut into little segments
1/2 bag of bitter leaves
8 Kalamata black olives
8 green olives
Handful of redcurrants
Handful of walnuts, crushed
2 sprigs of mint, finely chopped

Dressing
3 tbsp extra virgin olive oil
1 tbsp balsamic vinegar
Juice of 1/4 lemon
Freshly milled black pepper


To make...

Serves 2

  1. Evenly divide the bitter leaves between two plates
  2. Scatter over the olives and orange segments
  3. Slice the figs into quarters and divide evenly between the plates
  4. Crumble over the feta and walnuts
  5. Add the redcurrants and mint
  6. Make up the dressing my mixing everything together in a small jug, check for seasoning
  7. Pour the dressing over when you are ready to serve
  8. Serve immediately!
