Easy Breakfast Bowls

These breakfast bowls are quick to prepare and can be made ahead if required.  Smoked salmon & capers are high in salt so there is no need to add any to this dish.  Hard boiled or poached eggs work perfectly with the salmon and quinoa.  This breakfast is high in protein and has all the healthy fats you need to a perfect start to your day!


You will need...

Equipment
1 small saucepan or egg poacher
2 bowls

Ingredients
100g left over quinoa
100g smoked salmon
1-2 tbsp capers
1 avocado
2 large free range eggs
1/2 unwaxed lemon
Handful of watercress or pea shoots
1 tbsp pumpkin seeds
Freshly milled black pepper


To make...

Serves 2
  1. If you are using hard boiled eggs, boil some water in the pan, add the eggs and cook for around 4-5, if poaching, crack into the boiling water and cook for around 4-5 minutes (same if you are using an egg poacher)
  2. Divide the quinoa between the two bowls
  3. Slice the salmon into small pieces & season with black pepper
  4. Cut the avocado in half, remove the stone and scoop out the flesh, cut into half and then quarter
  5. Place the salmon and avocado on top of the quinoa, add the watercress/pea shoots and capers
  6. Zest half the lemon over and then squeeze the juice between the two bowls
  7. Add the egg and lightly season with black pepper
  8. Delicious hot or cold and can be made up ahead if required
Cooks Note:
If you don't have any left over quinoa, simply rinse 200g of quinoa thoroughly to remove the soap tasting coating.  Add to a small pan, add a vegetable stock cube (optional) cover with boiling water (about 100ml), bring to the boil, put the lid on and reduce the heat to low.  It should take about 10-12 minutes to fully absorb the water.  Leave to cool slightly
