Date Brazil & Ginger Energy Bites

Energy bites made with brazil nuts, cashews, pumpkin seeds & cacao powder & uncrystallised ginger for a distinctive flavour kick. These little bites are simply loaded with vitamins and several essential minerals including potassium, phosphorus, magnesium and selenium, all of which are vital for muscle & nerve function & antioxidants to protect again heart disease.

A truly nutritional energy bite!


You will need...

Food processor

60g cashew nuts (not salted)
60g brazil nuts (not salted)
120g fresh medjool dates (pitted)
60g pumpkin seeds
60g raw cacao powder
60g uncrystallised ginger
2 tbsp maple syrup
1 tbsp raw honey
Coverings (optional)
20g freeze dried raspberries (optional)
20g crushed pistachios (optional)
20g chopped toasted hazelnuts (optional)


To make...
15 balls (approx)

  1. Blend the cashews & brazil nuts for 1 minute or until finely chopped
  2. Add the pumpkin seeds & dates and pulse until combined
  3. Add cacao powder & ginger, maple syrup & honey, pulse until fully combined
  4. Using a teaspoon, scoop up some of the mixture and make into a small ball about the size of a walnut
  5. Continue with the rest of the mixture, you should make approximately 15 balls
  6. Put the your chosen covering on a plate and roll the balls to coat all over
  7. Place in an air-tight container and freeze for 40 minutes
  8. Remove from the freezer and place into the fridge
  9. They will keep for 2-3 weeks in the fridge
  10. Alternatively keep some in the freezer until you need them (up to 3 months)
