Crayfish Cocktail

With Homemade Dressing

The dressing for this cocktail is extremely easy to make and will keep in the fridge for 5 days, perfect to make ahead if required.  Crayfish are an excellent alternative to prawns.  They are high in protein, low in fat and carbohydrates.  Crayfish are high in B vitamins and minerals such as calcium, magnesium, iron zinc and phosphorus 


You will need...

Equipment
2 bowls
4 serving bowls
Glass jar with lid (if making ahead)

Dressing
Ingredients

4 tbsp rapeseed oil mayonnaise 
1 tbsp Dijon mustard
2 tbsp tomato puree
1-2 tbsp Tabasco
2 tbsp Worcestershire sauce
1/2 lemon juice
Handful freshly snipped chives
1 tbsp freshly chopped dill
Freshly milled salt & pepper
Cocktail
300g crayfish tails (drained)
6-8 gherkin's (chopped)
1 romaine lettuce, finely sliced
Handful of cress
1 tsp cayenne pepper or paprika
1/2 lemon juice


To make...

Serves 4
  1. Mix together the mayonnaise and mustard until fully incorporated 
  2. Mix in the tomato puree, Tabasco and Worcestershire sauce
  3. Squeeze in the lemon juice, lightly season, stir in the chives and dill
  4. In another bowl, add the crayfish, squeeze over the other half of the lemon and lightly season with freshly milled sea salt and pepper
  5. Finely slice the lettuce and lay into the bottom of your serving bowls
  6. Lay the chopped gherkin's on top, then add the crayfish
  7. Scatter with freshly snipped cress and dill and lightly season with cayenne pepper or paprika
  8. You can make these cocktails up the day before and keep in the fridge until needed
