Crab & Pepper Toasts


Crab & Pepper Toasts

A speedy lite bite, takes minutes to make and tastes delicious!


You will need...
1 large crab (dressed)
1/2 red pepper, finely diced
2 tsp dijon mustard
1 tbsp good quality mayonnaise
juice of 1 lemon
handful of cress
handful of baby spinach or watercress 
freshly ground black pepper
freshly snipped chives
1 small multi seeded sour dough or bread of your choice, finely sliced & toasted


To make...
Serves 2
  1.  Scrape all of the crab meat into a small bowl ensuring you removed any shell
  2. Mix in the mayonnaise & mustard, squeeze the lemon juice all over and season with lots of freshly ground black pepper
  3. Finely dice the pepper and mix into the crab mixture
  4. Toast the bread
  5. Place the toast on 2 plates, layer with the spinach, crab mixture & cress 
  6. Season with more pepper (optional)
