Chocolate & Hazelnut Flapjacks

These flapjacks are incredibly easy and extremely tasty.  They contain cacao nibs for a truly nutritional punch.   They are hailed as a superfood as they contain a variety of antioxidants and nutrients.  Cacao nibs are a rich source of minerals including Magnesium, Potassium & Iron.  Cacao nibs are the raw base for many chocolate manufacturers around the world


You will need...

Equipment
Large saucepan
Baking dish 23cm
Non stick baking parchment
Medium mixing bowl

Ingredients
200g jumbo rolled oats (not instant)
100g toasted chopped hazelnuts
80g chia seeds
100g cacao nibs
100g coconut sugar
100g unsalted butter
3 tbsp maple syrup
1 tbsp vanilla extract


To make...

Makes approx 20 squares
  1. Preheat the oven to 160/140(fan) Gas 3
  2. Line your baking tin with non stick baking paper
  3. Mix the oats, hazelnuts, chia seeds & cacao nibs in a bowl
  4. Melt the butter and coconut sugar in the pan on a low heat until the sugar has completely dissolved, stir in the vanilla extract
  5. Remove from the heat and mix in the oats, hazelnuts, chia seed & cacao mix
  6. Mix until fully combined and coated in the butter/sugar mix
  7. Add the maple syrup and mix again
  8. Pour into the prepare baking dish and flatten with a pallet knife or the back of a spoon 
  9. Try to make it as even as possible before putting it in the oven
  10. Bake for 35 minutes
  11. Leave to cool in the tin for 20 minutes 
  12. Cut into square and keep in an air-tight container
