Chicken Avocado & Cashew Salad

Chicken & avocado pair beautifully together, with the addition of creamy cashew nuts, this salad is full of flavour and high in healthy fats that are essential for our bodies to function properly.  Cashews provide minerals, such as magnesium, cooper and manganese, which are good for bone health and may lower the risk of osteoporosis 

You will need...

Large frying pan
Pestle & mortar or mini food processor

2 chicken breasts, skinless & boneless, finely sliced
1 ripe avocado, finely sliced
Handful of unsalted cashew nuts
1/2 bag mixed salad leaves
12 cherry tomatoes, halved
10 Halkidiki olives, sliced
6-8 radish, sliced 
Handful of cress
1 tsp rapeseed oil
Freshly milled seasoning
1 tsp dried oregano
1/2 -1 tsp cayenne pepper
1 tbsp extra virgin olive oil (optional)
1 tsp balsamic vinegar (optional)

To make...
Serves 2
  1. Firstly dry fry the cashew nuts for a few minutes on a medium heat, turning frequently.  Don't leave the pan as they can burn quite easily
  2. Remove from the pan when they have coloured slightly and set aside, once cooled bash them in the pestle & mortar or mini processor until finely chopped
  3. Finely slice the chicken using a fork to hold it in place (and to stop you getting it on your hands!)  and a sharp knife
  4. Season with freshly milled salt and pepper and the oregano and cayenne pepper
  5. Heat the oil in the pan on a medium heat and cook the chicken slices for 5-8 minutes, turning occasionally until completely cooked through
  6.  While the chicken is cooking, scatter the salad leaves between two plates and dress with the tomatoes, avocado, radish, olives & cress
  7. Once the chicken is cooked through, transfer between the two plates and scatter over the chopped cashew nuts
  8. Lightly dress the plates with the extra virgin olive oil and balsamic vinegar and season to taste
  9. A spoonful of my super crunchy 2 cabbage slaw goes really well with this salad!
