Chewy Granola Bites

with apricot and cranberry

These chewy bites are incredibly easy to make and keep well in an air tight container for a week (if they last that long!) A delicious snack without all the hidden nasties.  Made with wholegrain rolled oats, milled linseeds and sesame seeds for a truly nutritious treat


You will need...

Equipment
Large saucepan
Baking dish 23cm
Non stick baking parchment
Medium mixing bowl

Ingredients
200g jumbo rolled oats (not instant)
100g milled linseeds with goji berries, sunflower and pumpkin seeds
80g sesame seeds
80g chopped dried apricots
80g dried cranberries
1 tsp cinnamon
100g unsalted butter
100g coconut sugar
1 tbsp vanilla extract
3 tbsp maple syrup


To make...

Makes approx 20 squares
  1. Preheat the oven to 160/140(fan) Gas 3
  2. Line your baking tin with non stick baking paper
  3. Mix the oats, linseeds, sesame seeds, apricots, cranberries and cinnamon in a bowl
  4. Melt the butter and coconut sugar in the pan on a low heat until the sugar has completely dissolved, stir in the vanilla extract
  5. Remove from the heat and mix in the oats and seed mix
  6. Stir until fully combined and coated in the butter/sugar mix
  7. Add the maple syrup and mix again
  8. Pour into the prepare baking dish and flatten with a pallet knife or the back of a spoon
  9. Try to make it as even as possible before putting it in the oven
  10. Bake for 35 minutes
  11. Leave to cool in the tin for 20 minutes
  12. Cut into square and keep in an air-tight container
