Cardamom Rose & Pistachio Cake

A really easy to make cake that is incredibly aromatic and pairs beautifully with an afternoon cuppa!  Cardamom seeds contain antioxidants and are great for digestive health' they are the third most expensive spice in the world, after vanilla and saffron


You will need...

Equipment

Large mixing bowl
Hand held electric mixer
23cm spring form cake tin
Pestle & mortar
Non stick baking parchment

Ingredients
4 cardamom pods
150g unsalted butter, melted
3 large free range eggs
200g golden caster sugar
1 tsp vanilla extract
1 tsp rose extract/water
200g white spelt flour
100g ground almonds
1 tsp ras el hanout
2 tsp fresh lemon juice 
2 tsp lemon zest
150ml buttermilk
Topping
100g unrefined icing sugar
2 tsp rose water
1-2 tbsp fresh lemon juice
Handful of edible dried roses
Handful of shelled pistachios, crushed


To make...

To Make

1.     Preheat the oven to 180/160(fan) Gas 4. Line your cake tin with non stick baking parchment and grease the sides

2.     Bash the cardamom pods in a pestle and mortar to release their seeds, discard the shells, bash until quite fine. Set aside

3.   Melt the butter in a pan or microwave, let to cool

4.   Mix the eggs and sugar in a large bowl until smooth. Add the vanilla and rose extract, then beat in the flour, almonds and baking powder

5.   Add the ras el hanout and bashed cardamom seeds, melted butter, lemon juice and zest

6.   Add the buttermilk and mix thoroughly until it is fully combined

7.     Pour into your prepared cake tin and bake for 45 minutes or until a cake tester comes out clean

8.   Leave to cool for 20 minutes while you make the icing

9.   Mix the icing sugar with the rose water and lemon juice until you have a thick icing. Don’t use more than 2 tsp of rose water as it has a very over powering taste! If you need more liquid, use lemon juice or water

10. Once the cake has fully cooled, smooth over the icing, scatter with a handful of dried rose petals and bashed pistachios
