Burrata, Strawberry & Avocado Salad

with spinach & flaked almonds

The creaminess of the burrata compliments the sweetness of the strawberries and works really well with the subtle crunch of the almonds.  This salad is a true celebration of the beautiful British strawberry which when in its peak is simply delicious.  Strawberries and are incredibly nutritious as they are high in vitamins C & K and can help to boost your immune system and are great for skin health


You will need...

Equipment

2 large plates
Ingredients

2 large handfuls of freshly washed baby spinach
1 burrata ball or mozzarella, cut into small chunks
1 avocado, cut into thin slices
10 pitted Kalamata olives
10 strawberries , washed, hulled, cut into quarters
Handful of basil leaves, torn into strips
Large handful of toasted flaked almonds
1 tsp poppy seeds
1-2 tbsp extra virgin olive oil for dressing
Freshly milled seasoning


To make...

Serves 2

  1. Arrange the spinach evenly between the two plates, cut the burrata or mozzarella into small chunks and scatter between the two plates
  2. Cut the avocado into small slices and scatter between the two plates, add the olives and strawberries, scattering evenly again
  3. Add the basil, flaked almonds and poppy seeds, drizzle with extra virgin olive oil and lightly season with freshly milled seasoning
  4. Serve immediately
