Blood Orange & Chia Muffins



Blood oranges are generally available in the UK from January through to March.  They are smaller than most oranges but have a wonderful dark crimson colour and taste exceptionally sweet.  They are high in vitamin C and taste absolutely delicious.  Chia seeds are tiny but loaded with essential vitamins and minerals including omega 3 and high in fibre and a great source of protein


You will need...

Equipment
12 hole muffin tin
2 medium mixing bowls
2 jugs
Fine grater

Ingredients
1 blood orange
260g white spelt flour
40g ground almonds
175g golden unrefined caster sugar
2 tsp baking powder
3 tbsp chia seeds
200ml milk
60ml rapeseed oil
1 tsp orange extract

Frosting Ingredients 
100g golden unrefined icing sugar
1 blood orange


To make...

Makes 12 muffins
  1. Preheat your oven to 200/180 (fan)
  2. Lightly grease the muffin tin with a little of the oil and kitchen paper
  3. Mix the chia seeds with the milk in one of the jugs, leave to sit for 5 minutes, stir occasionally to stop the chia seeds from sticking
  4. Mix in one bowl the spelt flour, caster sugar, baking powder
  5. In the other bowl mix the oil, egg, zest and juice from one of the oranges, pour in the milk/chia seeds and whisk together
  6. Pour the wet ingredients into the dry and gently mix together for 1 minute
  7. Spoon the mixture into the muffin tin and bake in the hot oven for 15 minutes 
  8. Mix the icing sugar with the juice and zest from the other blood orange until you have a runny icing
  9. Remove the muffins from the oven once they have risen and browned
  10. Leave to rest for 5 minutes, then drizzle the tops with the icing sugar 
  11. Add extra orange zest to decorate (optional)
  12. Absolutely delicious with an afternoon cuppa!
