Berry Coulis

Making a coulis is very simple, I find that berries and strawberries work the best.  They can be kept in the fridge for a week or alternatively freeze them in ice cube trays and use when needed


You will need...

Sauce pan
Small bowl
Sieve
Hand blender or food processor 
150g raspberries or blueberries
200g strawberries, quartered
1 tbsp raw honey


To make...

Not sure!

  1. Put the  strawberries in a pan and add the honey
  2. Cook on a low heat and stir occassionally for about 8 minutes
  3. Add the raspberries and continue to cook until the juices are released
  4. Remove from the heat and leave to cool for a few minutes
  5. Blend until smooth, then press through a sieve so you don't have any seeds
  6. Give it a taste and add a little honey if required
  7. Store in an air-tight container once fully cooled or freeze
  8. Delicious served with Greek yoghurt, ice-cream or chocolate brownies!
