Banana Walnut & Raisin Cake


A healthy twist for a banana cake, made with maple syrup, spelt flour, walnuts & raisins.  Perfect with coffee or green tea



You will need...
9x5" loaf tin
large mixing bowl
non stick baking parchment
200g white spelt flour
100ml pure maple syrup
3 ripe bananas, mashed
5 tbsp rapeseed oil
2 large free range eggs 
100g chopped walnuts
80g raisins
1 tsp cinnamon
1 tsp good quality vanilla extract
4 tbsp hot water
1 tsp bicarbonate of soda
1/2 tsp salt

To make...
  1. Preheat the oven to 160C Gas 3
  2. Mix together the rapeseed oil & maple syrup, add the eggs and mix until fully combined
  3. Add the mashed bananas & vanilla extract & mix again
  4. Add the flour, salt & cinnamon & mix until fully combined
  5. In a small bowl add the hot water and mix in the bicarbonate of soda, mix together then add to the cake mixture
  6. Add the walnuts & raisins and mix again until fully incorporated
  7. Pour into the loaf tin & bake for 55 minutes
  8. Once cooked check with a cake tester, it should be clean, if not bake again for a further 5 - 10 minutes
  9. Leave to cool on a wire rack for 30 minutes
  10. The cake will keep fresh in an air-tight container for 5 days
