Banana & Pecan Bread

This recipe is perfect for using up over ripe bananas.  The riper they are the sweeter they will taste.  Banana bread is ideal for breakfast or an afternoon snack.  Bananas are extremely nutritious and a rich source of potassium and fibre.  The rapid energy boost given by their high sugar levels (especially when they are overripe) makes them a great snack and perfect pick me up for any time of the day!


You will need...

Equipment
Loaf tin 9.5"
Non stick baking parchment
Medium mixing bowl

Ingredients
80g unsalted butter
120g golden unrefined caster sugar
2 large free range eggs
100ml semi skimmed milk (or milk or your choice)
1 tsp vanilla extract
3 large bananas
300g light spelt flour (I used Marriage's)
1 tsp baking powder
1 tsp bicarbonate of soda
100g chopped pecans


To make...

Makes 1 loaf
  1. Preheat the oven to 180/160(fan) Gas 4
  2. Line your baking tin with non stick baking paper
  3. Melt the butter in the jug covered with cling film or low heat in a pan
  4. Mix the melted butter with the sugar in a mixing bowl until fully combined
  5. Add the eggs and mix with the butter and sugar until fully combined
  6. Pour in the milk and vanilla and mix until nice and smooth
  7. Add the bananas to the same mixing bowl and mash with a fork until the bananas are mashed into small chunks
  8. Mix with the butter/sugar mixture then add the flour, baking powder and bicarbonate of soda
  9. Mix gently until all the flour is fully incorporated
  10. Fold in the chopped pecans
  11. Scrape into your prepared tin and bake for 55-65 minutes (check after 55 minutes with a skewer to see if it comes out clean, if not bake for a further 10 minutes)
  12. Bake for 35 minutes
  13. Leave to cool in the tin for 20 minutes 
  14. Delicious served warm 
  15. The bread can be frozen for up to 3 months once fully cooled
