Baked Asparagus 

Asparagus is in season from May to June in the UK, so it has a very short season but its worth the wait! It really doesn't need much cooking and is classed as a super food as loaded with highly nutritional vitamins and minerals.  Try to buy it in season if you can, you really will be able to taste the difference!


You will need...

Medium baking tray
10-15 Asparagus
1/2 lemon
1 tbsp olive oil
Freshly milled salt & pepper


To make...

Serves 4 as a side

  1. Pre-heat the oven to 200/180 (fan)
  2. Hold the asparagus at the other end of the tip and gently bend, it will break quite easily, discard the end as tastes woody
  3. Repeat for all the asparagus, wash thoroughly and dry with a tea towel
  4. Place in the baking tray with the lemon, drizzle with the olive oil and season well
  5. Bake for 10 minutes, squeeze the cooked lemon over and serve immediately!
