Almond & goji energy balls

These energy balls are the a little bit naughty but for all the right reasons, loaded with almonds & fresh medjool dates, goji berries and cacao powder.  Enriched with vitamins and minerals.  The perfect pre or post workout treat or for that 3pm slump to get you through to dinner time.


You will need...

Food processor 

100g almonds
100g raisins
200g fresh medjooll dates (pitted)
60g dried goji berries
80g pumpkin seeds
80g raw cacao powder
60g coconut oil 
40g desiccated coconut to coat (optional)

To make...
25 balls (approx)
  1.  Blend the almonds and pumpkin seeds for 1 minute or until finely chopped
  2. Add the goji berries and raisins and pulse until combined
  3. Add the dates, cacao powder & coconut oil, pulse until fully combined 
  4. Using a teaspoon, scoop up some of the mixture and make into a small ball about the size of a walnut
  5. Continue with the rest of the mixture, you should make approximately 25 balls
  6. Place the desiccated coconut on a plate and roll the balls to coat all over
  7. Place in an air-tight container and freeze for 40 minutes
  8. Remove from the freezer and place into the fridge
  9. They will keep for 2-3 weeks in the fridge
  10. Alternatively keep some in the freezer until you need them (up to 3 months)
